20: 1200-23-01-.03(5)(a)6. New low boy unit holding TCS foods 45-47°F. Due to business demand and low boy being main prep area, not using low boy is not feasible. PIC is putting low boy TCS foods on TILT, TCS foods will be used, put in walk in cooler, or discarded every 4 hours. TCS foods in cold storage must be held at 41°F or below.

31: 1200-23-01-.03(5)(a)5. Multiple TCS foods left out to cool at room temperature. TCS foods must be cooled in a cold holding unit, in a ice bath, ice wand etc. to ensure 6 hour cooling period is met.

37: 1200-23-01-.03(3)(b)1. Numerous TCS foods left uncovered in low boy unit. Foods held in cold storage must be covered to help prevent contamination.

45: 1200-23-01-.04(1) Reach in freezer doors and gaskets in poor repair.

Lowboy unit holding foods 45-47°F. Lowboy foods put on TILT and to be used or discarded every 4 hours. See #20. No rodent activity observed during routine inspection. Establishment has active pest control program per PIC.
