20: Improper cold holding of chicken and fish in non commercial reach in cooler. Corrective Action: placed here 3 hours ago according to person in charge. Move to reach in freezer to cool to proper cold holding temperature and non commercial reach in cooler was adjusted from setting 1 to setting 4 (of 5, 5 being the coldest). Follow up required to ensure proper compliance and reviewed proper monitoring of reach in cooler while determining root of temperature issues. If cooler does not lower to proper 41F or below it should not be used.
