Complaint received day-of consultation stating that lettuce was old, burgers tasted "funny," and onion rings were burnt.
Inspection conducted with date marking, cold holding, hot holding, cooking temperatures, and quality of products in mind.
Burger cooked to 186°; hot held at 147°
Lettuce in prep unit was slightly browned; PIC changed out lettuce without being prompted; lettuce in prep unit is slightly elevated in temperature (44°) with unit open during rush; other dense products in unit are in temperature; lettuce is expected to return to adequate temperatures promptly when rush is over and unit is closed. Spoke with PIC about keeping units closed when busy hours have subsided.
