4: Observed server eating fries at expo station next to customer food. All eating should be done in a separate area from food service. Provided education and employee discontinued eating.

22: Observed pico at 51°F with no time mark and no written TILT policy present. PIC stated they use TILT for pico. all items under TILT must have both a time mark on item and a written policy for said product and TILT procedures. PIC discarded product (5lbs).

31: Observed pasta cooling in large covered container. Cooling should occur in smaller container and uncovered to allow for steam.

42: Observed wet stacking of dishes.

53: Floors and ceiling in poor repair.

Additional Comments

Complaint: customer allegedly got sick after eating queso, and "swipe right" tacos on 9/2/24.
