14: Dish machine reading past 200ppm, too toxic. Used my test strips as well as pics test strips. Pic will not use dish machine until it gets properly fixed and reading within proper cl range. Will use their comp sink to wash, rinse, and sanitize.

20: Enchiladas in make line cooler made yesterday not in proper cold holding temp range. Pic embargoed. Diced tomatoes cut this morning not in proper cold holding temp range. Pic placed in cooler to chill down. I placed thermometer in cooler and got an ambient temperature of 53 degrees. Pic has put in a work order to get cooler fixed. Moved all other foods to wic for storage. Pic will not use make line cooler until it’s properly fixed and reading 41 or below.

41: Ice scoop touching ice in bar

49: Hand washing sink not draining water well.

I will be back within 10 days for a follow up inspection to verify all priority item violations have been corrected.
Discussed proper hand washing, ware washing, food source, food storage, holding and cook temps, cooling when applicable, employee hygiene, employee health, demonstration of knowledge, and storage and use of toxic items.
