8: Entered kitchen ahead of pic and observed the hand sink out of soap, corrected by pic immediately refilling

21: Observed cole slaw in ric with no date mark - pic stated it was moved off the mobile truck 2 days ago. Corrected by embargoing 1lbs. Observed ziplocks of deli meats and puuled pork with dates ranging from 4/14 to 11/18 - pic stated they portion and freeze these and then thaw as needed. Corrected by embargoing approximately half a pound of deli turkey, deli ham, deli bologna, and pulled pork. Discussed date marking with 24 hrs. Discussed freezing pauses 7days and when freezing it is required to mark the prep/freeze/and thaw dates.

23: New breakfast menu observed. Pic confirmed Dishes with eggs can be cooked to order under ooked. Menu breakfast menu missing both the consumer advisory and the disclosure (asterisk matking menu items amd advisory). Will follow up to ensure menus are properly marked.

46: 3 comp set to rinse/was/h/sanitize - pic corrected. Discussed changing stikers

53: Excessive ice build up in freezer. Fan dripping from ceiling, grease build up on surfaces thrpughout kitchen and in the coolers.

Additional Comments

Will return anytime within 10 days to ensure the correction of the observed priority item violation 2q and 23.

Observed a total of 32 seats indoors and only one bathroom. Only 16 seats (including high chairs) are allowed inside an establishment when 1 restroom is present. 16 chairs and their tables must be removed prior to openin on the next day of business. If a restroom is to be added, plans must be submitted for approval prior to the work being done.

Also observed work being done next to the kitchnen, server stated they are renovating the kitchen oncebuilding permits are approved. Our department also requires proposed renovation plans prior to work being done. Will contact owner for the propesed plans. Work should not continue untill approval is also received from our department.
