Person in charge explained that those foods are kept on a 4-hour time control policy then discarded if not used. However, all products are not marked with a start and end time. Corrective Action: Person in charge drafted a Time as a Public Health Control policy and trained staff to label foods kept on policy with start and end times.
36: 1200-23-01-.05(5)(k) Observed live roach near mop sink area. Backdoor is not weather sealed and has several gaps where insects may enter.
