Observations & Corrective Actions

1: Due to multiple priority item violations noted, Pic does not have managerial control of mobile unit. Pic is not an ANSI certified manager. Pic was unaware that van could not be used as a storage unit for food and to go boxes. Discussed these items must be stored on the mobile unit or commissary. The van can only transport these items back and forth from commissary.

11: Raw cut frozen pork in container with lid and tortilla’s were being stored in white van beside mobile unit. Pic stated employee forgot to remove frozen pork from white van. Pic stored frozen raw pork on mobile unit in ric. Van can only be used to transport the food from the commissary to the mobile unit. Van can not be used as storage unit for these items.

20: Internal temperature of sliced raw steak, placed in cooler yesterday located in prep cooler / ric was above 41°F. Pic was unsure why raw meat was temping high. Meat was not recently prepped and other tcs food in prep cooler / ric had an internal temp of 41°F or below. Embargoed meat.

21: Cooked bbq beef from Friday not properly date marked. No legible date marking on container like cooked quartered chicken that had discard date of 10-9-24 on container. Container of cooked berej meat and fried pork was not properly date marked as well. There were several different red/orange stickers with numbers on containers, however they were not legible and pic could not explain the markings on the containers either. These foods were brought to mobile unit earlier in the week. Embargoed food. Discussed with pic there must be a consistant date marking system in place for rte food. Foods must be date marked when they were cooked, frozen, and taken out of freezer. Emailing pic date marking fact sheet.

26: Container of gasoline stored next to to-go boxes in van beside mobile unit. Pic removed container of gasoline from van and stored properly. Discussed to go boxes could not be stored in van beside mobile unit. They must be stored on mobile unit or at commissary.

37: Bag of onions stored on the floor of mobile unit.

56: Most current inspection report not posted.

Emailing applicable fact sheets to operator regarding observed priority item violations. A follow up inspection will be performed within 10 days to verify compliance of all priority item violations.
