Cooling period has passed for product at time of inspection. Corrective Action: product disposed by person in charge 5lbs embargoed.

Corrective Action: lettuce and tomatoes pulled and swapped with another pan in walk in cooler. Mist oikely due to high stacking of food. Reviewed proper cold holding temperatures and techniques
