19: 1200-23-01-.03(5)(a)6. Several items designated for hot holding are not holding proper temperature (sausage, pork, gravy). Potentially hazardous food must be held hot at 135F or above. Items were discarded as a precaution by manager.

20: Pimento cheese cold holding on prep line at 55F. Hold cold food that is potentially hazardous at 41F or below.

42: Discontinue “wet nesting” food equipment/dishes on clean storage rack. Properly air dry to prevent contamination.

47: Excessive build up of food debris on gaskets and in ventilation filters in buscuit area. Lids on equipment in cold drawers have excessive debris. Clean and sanitized on a more routine basis.

53: 1200-23-01-.06(5)(b)1. General cleaning is needed throughout kitchen (floor of mop sink, in buscuit area, etc). Replace cracked/loose floor tiles.
