8: (Out) upon entry observed hand sink clogged with food debris and backed up. Educated on hand sinks being used for hand washing only. Person in charge unclogged sink at time of routine inspection. 2nd time in a row for item, RCP to be delivered at follow-up.

31: Observed metal pan of brisket improperly cooling on prep table. Food item temped at (94.2°) at time of inspection, when questioned person in charge stated that product started cooling at 11:45. Item still within 2 hour initial cooling timeframe. Educated on proper cooling methods and had item placed on ice to complete cooling process in allotted timeframe.

35: Observed two large unlabeled plastic containers containing rice/beans by hand wash station not properly labeled as required.

37: Observed food products uncovered/unprotected and stored in walk-in cooler. Temped items to ensure they weren’t in a cooling process. Cover products as necessary unless items are in the process of cooling.

39: Observed sanitizer bucket liquid registering 0ppm of sanitize. Numerous wiping clothes not properly stored in sanitizer bucket.

42: Observed clean utensils stored in dirty plastic containers, clean containers as necessary.

47: Observed food debris/splatter throughout kitchen on equipment and on shelves, clean as necessary.

53: Floors dirty around equipment, baseboards, and dish machine area, clean as required.
