20: See temp - cooked rice sitting out and above 41°f. Cook stated rice had been there for several hours and was reheating individual portions. COS rice discarded and discussed proper cold holding temps and practices.
21: Observed a ziplock bag of mushrooms in the fridge date marked 4/28/23 COS by having employee discard. Observed a ziplock bag of pineapple and one of peppers without dates, cook did not know when they were cut COS discarded and discussed. Will email fact sheets to owner.
34: No thermometer in the white fridge.
47: Spills in the white fridge, drawers with raw meat have the raw meat juice spilled inside.
