13: Observed multiple cartons of raw shelled eggs stored on top of containers of cheese and cooked fries in prep cooler. Corrective Action: removed

13: Observed several cartons of raw shelled eggs stored on shelf directly above containers of cheese covered with saran wrap in true fridge. Corrective Action: train proper raw storage and train to cover with harder material to prevent possible contamination.

14: Several clean plastic bins on storage shelf observed dirty. Corrective Action: removed and placed in sink to be washed.

18: Cooked pork in cooler made this morning been cooling for 5 hours observed reading 100F. Corrective Action: reheat to 165 and restart cooling process ensuring it is cooled from 135-70F within 2 hours then 70-41F within 4 hours. Should be 41F or below for no longer than 6 hours total cooling time.

21: Pork carnitas sauce made 3 days ago observed not date marked in cooler. Corrective Action: train proper date marking, embargoed 1lb.

47: Interior rim of ice machine observed dirty with black build up.

47: Interior shelving of true fridge observed very dirty with black buildup.
