18: Observed chicken strips and deli turkey on the front make line both temping above 41°f, prep sticked showed they were made 5 to 5.5hrs prior, pic stated they were cooled in the wic and move to the line after 1hr. Pic used their own thermometer and recorded the same temperature. COS embargoed approximately 5lbs between the two, discussed proper cooling with operator.

20: Observed capicola and rotisserie salad above 50°f in the front make line, prep stickers stated it was made 2days prior and pic stated it has been in the make line since yesterday. Pic used their own thermometer and had the same reading. COS by embargoing both, approximately 1lb total, and discussing proper cold hold with pic.

47: Appears to be a black mold-like build up in ice machine.
