Observations & Corrective Actions

1: No certified manager on site, pic unable to discuss proper holding and cooling temps. Additionally, due to high amount of priority item violations, more active managerial control is needed.

2: Pic unable to discuss, no policy posted. Discussed symptoms and diagnosis, will email fact sheet and suggested printing and posting in the kitchen

11: In the walk-in cooler: Observed a container of ground turkey that had been opened and left unsealed/uncovered in the fridge, Raw product extremely discolored throughout entire container and dried out and pic unsure when it was opened - Embargoed 1.5lbs container. Opened bag of country ham, left unsealed, pic unsure when it had been open and ham was extremely discolored throughout entire product - embargoed 0.5lbs. In the kitchen: observed a severely dented can of apples mixed in with cans in good condition. Pic stated all cans where for use. Embargoed 1lbs

18: Observed 2 large/deep pans of sweet potatoes sitting out on the counter at 84°f, 1 large pot of chicken broth sitting out at 75°f, and a container of gravy sitting out at 75°f. Pic stated food prep began early in the morning and they had started the cooling process at 10am. Cooling process described was taking the items out of the over/off the stove and placing on the counter and covering with foil. Pic stated they took a temperature at 11am and it was 90°f. TDH took the above temperatures 3.5 hours later. Corrected by embargoing approximately 40lbs of potatoes, 3 gallons of chicken broth, and 1 lbs of gravy. Discussed proper cooling time and temperature windows and better cooling practices. Suggested cooling logs, will email to pic.

21: In walk-in cooler: Observed 2 ziplock bags of sliced bologna, one opened bag of country ham, and one package of fully cooked smoked sausage all opened and without date marks. Pic stated sausage would have been opened Sunday as its a weekend -only brunch item, ham was unsure (see #11), and bologna unsure. Corrected by embargoing approximately 3lbs total and discussing proper date marking

23: Has a new brunch menu that includes steaks that hostess stated can be offered undercooked - new menu does not have the consumer advisory statement, nor are the items offered disclosed.

31: Large quantity of items left to cool covered, in deep pans, and at a room temperature of 75°f with no other assistance.

36: Live Flies present throughout kitchen

48: Hand sink near the fryers and hand sink by the ice machine do not have hot water available under pressure.

50: Dish machine wastewater immediately overflows the drain - does run to another floor drain (should both back up it could back up into the rest of the kitchen)

50: Hand sink by the fryers has a severe leak and is draining onto the floor.

53: Walk-in cooler door has a broken top hinge, damaged ceiling tiles throughout kitchen some missing and insulation is exposed, floor tiles damaged and missing throughout kitchen. Dish machine sparks in the front right corner when closing the machine. Front reach in cooler has standing water build up.

Will return sometime within 10 days to ensure the correction of the observed priority item violations marked out between 1-27

Will email owner fact sheets and other materials relevant to operations, Discussed implementing a Food Safety Plan (FSP) in order to obtain active managerial control over repeated priority violations. Advised operator I was available to assist with developing a FSP.
