18: Chicken breast in cooler drawer was cooked yesterday at 3pm and still had temp above 41°f at time of inspection. Embargoed. A follow up inspection will be performed within 10 days to verify compliance of all priority item violations. A warning letter will requested due to violation being noted on two consecutive routine inspections. Will email Fact Sheet on Cooling Procedures. Discussed implementing a Food Safety Plan (FSP) in order to obtain active managerial control over repeated priority violations. Advised operator I was available to assist with developing a FSP.
