7: Observed employee handling ready to eat muffins with no gloves on. Education provided. Employee stated they will use tongs next to holding area to handle muffins going forward.

20: Flat of Raw shell eggs at 72F next to cook top. Cook stated they have been unrefrigerated approx 30 min. Either maintain eggs at 41F or below, or use time as a public health control and time stamp eggs with the time they are removed from temerature control. Eggs were placed back in refrigerator. Sausage also sitting on top of prep unit unrefrigerated at 65. Cook stated it had been out approx 10 min. Sausage was placed back in refrigerator for proper temperature control.

53: Floors, walls, ceilings are in poor repair. Walls and ceiling have holes in various areas. Flooring is wood. Provide floors, walls, cielings that are smooth, non absorbant, and easily cleanable.
