6: Observed employee on cook line handle dirty rag, place rag back in pocket, and resume food prep without washing hands first. Corrected by discussing proper hand washing with pic.

19: Cheese queso in microwave not within proper temp range. Pic stated they reheated queso 20 min ago on microwave to place in steam well and must’ve forgot it was in there. Corrected by discussing proper hot holding temps and reheating queso back up. This is a repeat violation, a warning letter will be requested.

31: Pico de gallo prepped 3 hrs ago will not be able to cool down in time due to the heat of the stove directly across from it. Discussed using ice bags to help cool foods down and to help cold hold.
