13: Uncovered shelled eggs stored on top rack above ready to eat foods in walk in cooler. Discussed proper food storage and pic relocated eggs

19: Bean and cheese queso are stored on stove to hot hold and to serve orders with not within proper temp range. See food temps. Discussed hot hold temps. This is a repeat violation, a warning letter will be requested.

21: Chimichurri sauce and container of rice had September dates on them. Pic stated they were made yesterday. Discussed date marking and pic relabled containers

31: Pic stated container of rice in walk in cooler was cooked 5 hrs prior today. Temped rice at 58 degrees. Rice was sealed shut in a large container. Had pic reheat rice to start the cooling process over, discussed 2 stage cooling process

I will be back out within 10 days for a follow-up inspection to verify all priority item violations have been corrected

Discussed implementing a Food Safety Plan in order to obtain active managerial control over repeated Priority Items. Advised operator I was available to asist with developing the FSP.

Provided applicable fact sheets to operator regarding observed Priority Items.

Discussed proper hand washing, ware washing, food source, food storage, holding and cook temps, cooling when applicable, employee hygiene, employee health, demonstration of knowledge, and storage and use of of toxic items.
