13: Eggs stored over celery and other ready to eat vegetables. Corrective Action: moved to proper storage area.
27: Observed the vacuum packaging of sliced meats and sliced cheese in freezer. Properly date marked but held over 24 hours from time of packaging. Corrective Action: disposed 2 lbs and reviewed HACCP requirements and that is best not to use special processing for Susceptible populations,
Additional Comments
Reviewed and discussed that vacuum machine cannot be used unless following certain guidelines or applying for HACCP reviewe alternatives such as simply using ziploc bags to help preserve freshness. Operator states they vacuum packaging will no longer be used.
