6: Observed employee come from outside of kitchen, rinse hands off at 3 comp sink then handled clean utensils. Discussed proper hand washing with pic.

20: Left over sushi rolls from sushi bar at room temp being stored inside of a rice bin off to the side. Discussed proper cold holding temps. This is a repeat violation, a warning letter will be requested.

35: Multiple containers of flour not labeled.

41: Numerous cups with no handles being used and stored submerged in product.

53: Floors in poor repair throughout kitchen

Discussed proper hand washing, ware washing, food source, food storage, holding and cook temps, cooling when applicable, employee hygiene, employee health, demonstration of knowledge, and storage and use of of toxic items. Please be sure you and all food handling employees are familiar with these regulations.

Discussed implementing a Food Safety Plan in order to obtain active managerial control over repeated Priority Items. Advised operator I was available to asist with developing the FSP.
