1: Had violations that happened last time. Knew the water wasn’t working properly and came out.

4: Employee drinking his red bull in the mobile unit. Can not drink in the mobile unit.

6: Employee washed hands in three comp,sink. Must use the hand sink

8: Had to turn water on. Must have the water on during all hours of operation.

20: Bologna kept on top of ribs with no cold source. Threw away

37: Employees coke sitting on top of brown cambro

46: No test stips on unit

48: Had to turn water on when turned on then the three comp faucet runns constantly

Had items hand washing and cold holding on two consecutive inspections. A third time and the permit could be revoked.
Discussed implementing a Risk Control Plan(RCP) in order to obtain active managerial control over repeated Priority Items. Advised operator I was available to assist with developing the RCP.
