Observations & Corrective Actions
1: Due to numerous priority violations, managerial control has not been established.
7: Observed cook scoop cooked food from grill and scoot it off scoop with bare hand onto plate to be served to customer.
13: Pan of limes stored next to pan of raw meat on bottom shelf in wic.
14: Upon arrival 3 comp had middle and right most compartments filled. Middle had soap water, pic said right had chlorine sanitizer. Pic stated dishes are washed in soap water then put in sani water. Sani comp read 0 ppm cl. Discussed proper warewashing and 3 comp sink set up, observed pic set up properly reading 75 ppm cl.
17: See temp log, cooked chicken, fish, and pork on steam table temped below 122 F. Pic stated foods had been cooked previously and cooled, then reheated in last hour to temp of about 140F formhot holding. Discussed reheating previously cooked and cooled foods to 165 F for hot holding. Pic put in oven to warm to 165.
18: Cooked carnitas and beef in wic were cooked last night according to pic. All temped 48F. Foods were stored in deep plastic containers with lids fully covering. Pic discarded 25 lbs.
19: Bowl of cooked chicken was placed on steam table but not in a well. Temped below 135F. Pic discarded 1 lb.
20: Raw pastor and azada in wic were in separate deep plastic containers with lids fully covering. All temped 48 F or greater. Each had date mark with most recent one showing 10/4.
26: Two spray bottles with pink liquid and labeled “Disinfectant” stored below register counter directly in front of food products intended for the public. Squirt bottle of hand sanitizer stored directly in front of bin of single use utensils.
37: Jackets stored on drink bags for drink machine
46: Qa test strips present, but establishment using chlorine for warewashing during inspection.
55: No permit posted
56: Most recent inspection not posted

Will return for follow-up inspection within 10 days to ensure priority violations (items 1 - 27) are corrected.
