6: Observed employee answering her phone before packaging customer donuts. Employee did not wash her hands before handling food.

39: Wiping cloth was sitting on counter. Please place sanitizer in bucket with sanitizer.

41: Scoop stored pn top of box of coconut flakes. Please keep scoop covered.

45: Grease build-up and icing build-up on fryers and icing glazing equipment.

45: Inside and outside of reach in cooler and reach in freezer needs to be wash,rinse and sanize. There is food buildup on doors and shelves have food debris.

47: Bottom shelf on long metal table has food build up. Please wash ,rinse and sanitize. There are used disposable gloves on this same shelf.

53: Cardboard boxes laid flat on floor near fryers. Please remove.

53: Walls are stained. Icing build up on poll and wall near fryers.

53: Ceiling tiles in dining room are stained. It looks like water damage.

56: Most recent inspection is not posted. Inspection from 2/24/23 is posted. PIC stated that frame fell.

Additional Comments

Establishment did not have any sanitizer in their sanitizer bucket yet there was a wiping cloth on counter use to wipe food contact surfaces. I asked person in charge what type of chemical she was using to wipe counter. She said soap and water. I informed her that she must use sanitizer to clean her food contact surface.



Establishment must discard disposable gloves with each use I observed used gloves on tray where display donuts are And long metal table bottom shelf.


During inspection there were several trays of kolaches in kitchen. I asked person in charge why was her food sitting out at room temperature and she said her dough is proofing. She let her dough sit out for about 20 minutes than place in refrigerator. This is how they prepped their kolaches for tomorrow morning.



I recommended employees take a food safety class with Shelby County Health Department. I emailed establishment the dates for classes.
