1: Multiple critical violations marked

14: Dishwasher was not sanitizing. The plastic tub of sanitizer was empty. The pic replaced it but was unable to prime the unit. I asked he set up a 3 compartment sink until the dishwasher is showing sanitizer again on test strips. Will require a follow up within 10 days

19: Rice, queso are not in the proper temperature range on the hotline. Other items are right at 135 degrees. I spoke to pic about increasing the temperature of the hitline to make sure foods are held at 135 degrees or above. This is a repeat violation, a RCP will be sent to pic to fill out if he chooses. A warning letter will be issued. Will require a follow up within 10 days

21: No date marking on any items in rics or in the wic. Spoke to pic about date marking foods. Will require a follow up within 10 days
