27: 1200-23-01-.08(1)(d)3. Nine bags of pulled pork BBQ in vacuum sealed bags date marked 7/8/2021. Hold order placed on these bags of bbq. Also, there is a vacuum sealer and bags in the facility, upon asking the PIC it was discovered that they vacuum seal the ribs in bags in this facility and they are not bought at commissary. No date marking was placed on the ribs and no HACCP plan is available for them. The ribs were cut from the bags and embargoed. Contact information was left on the hold order for Phillip and Alexander. Pictures of vacuum sealer, bags, hold order, and bbq are included in the inspection.
