6: Observed employee prepping avocado with gloves on, he then relocated a water hose with gloves still on, went in wic, came back out and wiped gloves instead of changing gloves and washing hands prior to going back to getting avocado. Discussed proper glove use and hand washing. Provide applicable fact sheets to operator regarding observed Priority Items. Discussed implementing a Risk Control Plan (RCP) in order to obtain active managerial control over repeated Priority Items. Advised operator I was available to assist with developing the RCP.

18: Cooked carnitas in wic made yesterday were out of temp. See food temps. Embargoed carnitas. Provide applicable fact sheets to operator regarding observed Priority Items.
