26: Sanitizer bucket over togo boxes near warmer box section. Corrective Action: moved to proper storage area.

27: Cooling log is not currently being filled out. Corrective Action: reciewed proper usage of current cooling log and requirment to record cooling time for every hour

Physical copy of employee illness policy given.

Reviewed proper avoidance of wet nesting at 3 compartment sink. Reviewed that all single items should be stored in a way that prevent contamination of food contact surface. Discussed delivered boxes must also be stored off floor.

Obswrved employees have paper towel wrap on cooler handles in raw area in attempt to prevent cross contamination. Discussed that this would not negate the need to wash hands when moving from raw food prep to any other prep area. Discussed that is may make cleaning handles easier but we do not consider paper towel wrappings as a cleanable surface and should no longer be used.
