20: Diced tomatoes in prep cooler at 49°, tarboola salad at 54°F placed in cooler 1.5 hrs ago. Prep cooler at 45°. Corrective action - Person In Charge placed tcs foods in chest freezer for rapid cooling. Cooler can not be used for temperature controlled foods. Recheck of cooler will occur in 10 days.

20: Back Reach in cooler Norlake is reading 45°. Tcs foods- sour cream, terboola salad, milk, raw chicken -all reading above 41°F. Corrective action - all raw foods placed in cooler this morning at 11am moved to back Reach in cooler, all other coooked and tcs foods stored in Reach in cooler embargoed. 10lbs. Cooler can not be used for tcs foods until repaired and reading 41° F or under. Recheck of cooler will occur within 10 days.
