7: Observed employee place roasted peppers in togo container with bare hands. Due to this priority item violation being noted on two inspection reports in a row, a warning letter will be requested. Discussed implementing a Food Safety Plan (FEP) in order to obtain active managerial control over repeated priority item violations. Advised operator I was available to assist with developing the FSP.

18: Sliced and diced tomatoes prepped at 10:00 am this morning was above 41°F. Embatoed tomatoes. Tomatoes are stored in the ric. Discussed cooling options for tomatoes with owner.

19: Cooked pork on stove was below 135°F. Owner unsure when pork fell below 135°F. Embargoed pork.
