1: Manager still has numerous repeat priority violations

6: Observed employee wash hands in 3 comp sink

8: No paper towels at the back hand sink.

18: Not cooling products correctly. Refried beans made yesterday 3/21 temped at 50 in the center. Discussed proper cooling procedures

19: Chicken and shredded beef left in pan in front of griddle top temped at 119 and 117 degrees.

20: Large pan of raw chicken in small make cooler not in temp. All other items are in temp

26: Window cleaners stored with to go sauce cups.

45: Outside of chip containers are dirty. Must wash rinse and sanitize after each use.

Additional Comments

Items 1, 6 and 26 have been found on two consecutive inspections. A third time and the permit could be revoked.


Discussed implementing a Risk Control Plan(RCP) in order to obtain active managerial control over repeated Priority Items. Advised operator I was available to assist with developing the RCP.
