Manager described cooling process, however these items have been in walk in overnight and are not holding at proper temperature. Other items in walk in are stored in shallow containers and holding properly. Ambient temperature of the walk in is below 41F. Take measures to validate proper cooling. 135-70F within 2 hours, and from 70-41F within 4 hours.

20: Items in prep unit over burners on cookline are not holding proper temperature. Discontinue storing TCS foods in this unit until it is able to hold at 41F or below.

45: Handle missing on cold drawer unit, and one door tall unit handle is in disrepair. Repair/replace handles.

54: Cell phone observed on prep surface on cookline. Store employee personal items in designated area.
