20: Several tcs food on sauté cooler above 41°F. Pic threw food away. Pico and half and half in prep cooler 2 was above 41°F pic threw these away. These items came from wic. A warning letter of permit revocation will be requested due to this priority item violation being noted on two consecutive inspection reports in a row. Discussed implementing a Food Safety Plan (FEP) in order to obtain active managerial control over repeated priority item violations. Advised operator I was available to assist with developing the FSP. Temps are already being taken 3 times a day.

31: Improper cooling of jambalaya. Jambalaya was cooked and placed in container with the lid on in wic. Pic removed lid and placed in wif to rapidly cool down.

36: Several flies in the back.

55: Current permit not posted. Emailing a copy of current permit.
