1: Shift manager on duty unable to determine if dish machine uses heat or sanitizer.

6: Employees observed changing duties without properly washing their hands.

14: High heat dish machine only reached 140 degrees after multiple attempts.

20: Repeat. Batter station contained out of temp chicken and fish, temperature was 46 degrees. New orleans cajun mixture was temped at 60 degrees. Discarded mixture.

27: Cannot provide complete training logs for person and time.

34: Each cooler must have a thermometer.

35: Cracker breading not labeled.

37: Breading station was not covered. Flour, sugar, and breading stored without lids.

39: Several wiping cloths not properly stored in sanitizer.

42: Clean dishes must be dried before stacking.

43: Single service items stored incorrectly. Need to be inverted.

45: Ice scoop damaged Tip of metal ice scoop are sharp due to broken pieces missing and touching the wall. Rough edges could break off more in ice machine when in use.

46: Shift manager does not have heat thermometer or strips.

49: Multiple sinks leaking. Hand wash, 3 comp sink and dishwasher.
