Observations & Corrective Actions

1: No Certified kitchen manager present, pic unable to discuss basic food safety, priority violations observed during inspection.

6: Observed pic leave kitchen and return to kitchen to resume food prep without washing hands - observed substituting handwashing for glove change. COS discussed proper handwashing with pic, pic washed hands

14: Observed dish recently done in dish machine, ran the machine and got a reading of 10ppm cl. Pic stated a company services the machine, pic has test strips present but was unsure the proper concentration. COS primed the dish machine and ran a second time, got a reading of 50ppm. Provided onsite training to pic regarding proper ware washing and testing cl concentration.

21: Observed rice in ric without a date mark, pic stated it was made this past Saturday. Cooked chicken wings and sausage in the the ml without date mark, pic stated it was made this past friday. COS all unmarked items were discarded, discussed proper date marking with pic. This item has been marked on 3 consecutive inspections and a revocation request will be submitted as standard practice.

47: Observed employees using the hand sink as a prep sink for straining off water and rinsing dishes.

53: Walls have debris build up, ceiling tiles in poor repair.

Additional Comments

Observed more than 16 seats, including high chairs and chairs stacked to the side, inside the establishment. Pic must remove all excess seating.

Will return sometime within 10 days to ensure the correction of the observed priority item violation marked between 1-27.

Revocation request will be submitted as priority item 21 has been noted on 3 consecutive routine inspections
Will Provide applicable fact sheets to operator regarding Priority Item Violations via email. Discussed implementing a Food Safety Plan (FSP) in order to obtain active managerial control over repeated priority violations. Advised operator I was available to assist with developing a FSP.
