20: All tcs foods in makeline prep cooler temp 48F or higher. Thermometer in unit reads 45F; Thermapen recorded 48F. Pic stated service tech worked on machine yesterday due to food being out of temp the day before. Cos by embargoing 20lbs of food, pic calling for service, and using ice baths for any foods placed in cooler until repaired. I will email operator a food safety plan in order to obtain active managerial control over repeated priority item. Advised operator I was available to assist with developing the FSP.

34: No thermometer in walk in cooler

53: Ceiling is dirty throughout, holes in or chunks missing from drywall in multiple areas n

Establishment is not open at this time, but pic present prepping for opening.

Wic ambient temp is 41. Advised pic to monitor to make sure it does not rise. Also suggested taking thermometer from malfunctioning prep cooler and temporarily place it in wic until prep cooler is repaired.
