1: Multiple foodborne illness risk factors out of compliance. Person in charge does not have an approved food safety certification or is in control of risk factors.

17: Refried beans that began reheating at 9am temped 108 F. Previously cooked and cooled foods must reheat to a minimum of 165 F before hot holding. Embargoed 15 lbs of refried beans.

18: Three large plastic containers of queso that was cooked yesterday temped 55-60 F during inspection. Food had not cooled within the correct times and temperatures. Embargoed 150 lbs of queso.

19: Rice hot holding at 120 F—must hot hold 135 F or above.

20: Raw chicken and raw beef in low boy cooler by grill temping 44-48 F—must hold 41 F or below.
