Observations & Corrective Actions

19: Observed scrambled eggs sitting on the container by the grill not under temperature control and below 135°f. Pic stated they cooked eggs 30 minutes prior to the inspection and intended to add to dishes when needed. COS had pic reheat to a minimum of 165°f and add to the hot trays, discussed proper hot holding methods and temperatures.

31: Observed multiple bags of cut lettuce and lo mein Noodles in a cooler containing very little ice on the bottom of the bags. Discussed proper cooling and methods (see #18).

33: Observed cooked chicken sitting out unattended just over 41°f, pic stated it was thawing and that they removed it from the freezer prior to driving to the event. Had pic move to fridge to rapidly cool back down and discussed proper thawing.

Additional Comments

A warning letter will requested due to violation #19 being noted on two consecutive routine inspections. Will Provide applicable fact sheets to operator regarding Priority Item Violations via email. Discussed implementing a Food Safety Plan (FSP) in order to obtain active managerial control over repeated priority violations. Advised operator I was available to assist with developing a FSP.

Discussed time policy for bobba and garlin-in-oil, will send fact sheet with the above and available to help if requested.
