18: Large metal containers of refried beans, grits, sliced potatoes cooked on 11/28 temping 46°F-48°F in walk in cooler by dishwasher. 6 hour cooling process of TCS foods not followed. TCS foods must be cooled 135°F-70°F within first two hours. 70°F-41°F or below in following 4 hours. Embargoed 500 pounds of refried beans, grits, sliced potatoes.

20: Walk in cooler by dishwasher holding TCS foods 46°-48°F. Rear of fan unit iced up. Walk in cooler by dishwasher must not be used until able to hold TCS foods 41°F and below. Establishment has two walk in coolers outside capable of holding TCS foods below 41°F.

31: Rice and other TCS foods cooling at room temperature during inspector arrival. Foods must be cooled by a cold holding unit, ice bath, ice wand etc.

34: Thermometer in walk in cooler by dishwasher not working properly.

37: Bananas and granola stored in empty QA bucket on top of high heat dishwasher.
