17: Comm prcsd cooked chkn was in hot box in two separate pans. Pan one temped at 117 and pan 2 temped at 127. Both pans were placed in the hot box at 7am and had been reheating for 3 hrs. Op corrected by discarding. Op explained that the chkn is not reheated to be hot held but warmed to ‘knock’ the chill off. I explained thst the chicken mist be held at 41° or less if cold holding or 135° or higher if hot holding.
37: Observed an employee drink ( approved container with straw) in the griddle area. Employee removed drink and placed it in an approved area.
