19: Observed meat and Spanish in the hot holding ban was 131° , pic mentioned that he put it like 30 minutes ago , cos by letting pic heating it up to 165° then put it back in the hot hold ban , explained to him the 135° is the minimum temperature for hot hold tcs food , followed by follow up inspection to check back if the priority item violation had been corrected.
