19: Tall glass hot box across from grill holding baked chicken at 124-126°. PIC pulled and discarded chicken, moved other items to a different hot box.

21: Made-in-house tartar sauce in server case and server dipping well do not have date-marking.

37: Freezer ice leaking onto closed box. Unit must be repaired and ice build-up removed. No food may be stored under leaking ice.

39: Soiled wiping cloths stored on several surfaces and in staff member’s back pocket. Wet cloths must be kept in bucket and dry cloths need to be replced when soiled.

41: Serving utensils stored on top of warmer at room temp. These must be stored in food or in ice/hot bath.

53: Dust and grease build-up on ceiling tiles and vents. Concrete floor in dish room needs to be sealed, missing tiles need to be replaced.
