14: Dishmachine is currently being used as a high temp machine (no sanitizer). After 4 cycles, the max temperature was 155F. Eco lab was called for immediate service. Temperature must reach 160 at the surface for proper sanitizing.

45: 1200-23-01-.04(1) Gaskets missing on one door of 2 door unit. Replace missing gaskets to ensure proper cooling.

49: 1200-23-01-.05(2) Floor sink by dishmachine is backed up preventing proper disposal of wastewater. Overflow is going into next drain. Discussed with person in charge. Ensure all floor sinks are properly draining to approved sewage system.

53: 1200-23-01-.06(5)(a) Flooring throughout kitchen is wet with puddles of water. ( by bulk heating section). Drain water for safety and to prevent contamination

54: 1200-23-01-.06(3)(d) Ventilation filters are not installed properly both on cookline and in bulk heating area. Install filter properly for ventilation
