20: Multiple TCS food items in walk in cooler are not holding at 41F or below. Repair cooler so it is able to maintain TCS foods at 41F or below. Employee stated they will clean coils and monitor using probe thermometer.

21: Cooked bacon dated 9/23 in walk in cooler (past seven days). Bacon was discarded as a precaution. Employee was not sure if it may have been mismarked. Follow proper date marking requirements.

31: Three door low boy holding dough, cheese and sauces is not closing properly due to dough bins sticking out. Cheese was relocated to alternate refrigerator. Make necessary repairs to facilitate proper temperature control.

39: Wet wiping cloth observed on prep surface. Store wiping cloths in sanitizer solution when not in use.
