Observations & Corrective Actions

1: (Out) due to the number of violations and temperature control issues, item marked out of control. Item will be checked at follow-up.

6: (Out) observed employees put on gloves without properly washing hands first. Corrective Action- educated on proper hand washing and glove wear. Item will be checked at follow-up.

13: (Out) observed raw bacon in plastic container improperly stored over fresh cut mushrooms in prep table. Metal containers of raw beef stored above metal containers of cut onions in walk-in cooler. Item will be checked at follow-up.

19: (Out) observed rice (115.5°), refried beans (99.3°), and queso cheese (129.2°) on steam table temp out of limits. Corrective Action- educated on proper hot holding of 135° or greater. Due to cold holding issue and closure item will be checked at follow-up.

20: (Out) upon entry observed walk-in cooler at 50°. Numerous food items out of limits. When questioned person in charge stated that no logs had been maintained. Items embargoed-Cheese dip at 51°F - 62lbs, salsa at 54°F - 67lbs, cut lettuce at 47°F- 15lbs, sour cream at 50°F - 42lbs, shredded chicken at 61°F- 33lbs, ground beef at 68°F- 32lbs, cooked pork at 52°F- 20lbs, refried beans at 48°F - 35lbs, shrimp at 50°F - 30lbs, raw steak at 52°F- 8lbs, milk at 47°F - 9lbs, shelled eggs at 47°F - 25lbs, raw fish at 48°F- 15lbs, chicken at 48°F - 13lbs, raw chicken at 48°F-33lbs, raw steak at 46°F - 16lbs, cheese at 48°F- 6lbs, and ribeyes at 48°F - 12lbs. Corrective Action- educated on proper cold holding of 41° or less, embargoed 473 lbs of food products. Due to lack of other cold holding options and unable to operate safely establishment is closed as of 12:30pm until repairs can be made. Person in charge contacted maintenance and item will be checked at follow-up.

26: (Out) observed aerosol can of pledge improperly stored with paper towels in storage closet. Corrective Action- educated on proper chemical storage and item moved to a approved location. Item will be checked at follow-up.

33: Observed raw beef being improperly thawed on countertop in a container of standing water. Proper thawing must be done in a cold holding unit or under running water.

42: Observed clean utensils improperly stored with food contact edge facing up and out. Observed metal pans stacked wet (wet nesting) at dish storage area.

45: Seal/gasket on walk-in freezer door torn. Cutting boards stained and heavily grooved. Item requires resurface or replacement.

47: Observed food debris/splatter in microwave and interior of cooler in bar area.

51: Observed faucet in womens bathroom extremely loose and in need of repair.

52: Observed dumpster door left open and building materials stored on ground around dumpster.

53: Observed cracked floor tiles in kitchen near oven.
