Observations & Corrective Actions

1: Due to the amount of priority item violations noted - Pic does not have managerial control of establishment.

2: Pic unaware of symptoms and reportable diagnosis. Discussed and emailing employee illness fact sheet.

6: Employee entered through back door into dish area and proceeded to clean dishes without washing hands. Employee also went from from handling dirty dishes to handling clean dishes without washing hands. Discussed hand washing with pic.

6: Employee with gloves on took cart and containers that was blocking hand sink back to the dish area and went back to food prep without changing gloves and washing hands. Discussed hand washing with employee.

8: Hand sink located in the back where the 3 comp sink and dish machine is located was block by a cart with cardboard stacked on it and cardboard boxes were in the hand sink. Employees relocated cart and threw cardboard boxes away.

8: Hand sink in food prep area was blocked by a cart and containers. Employees removed and placed in the back of the kitchen where the 3 comp sink is located.

19: Cooked steak in hot holding drawer had an internal temperaure of 100°F. Cook noticed the hot holding drawer was turned off and he turned it back on. Pic threw away steaks. Discussed monitoring hot holding drawers to make sure that it does not get turned off.

20: Several tcs foods on make line out of temp due to over stocking food. Out of temp food was thrown away by pic.

20: Someone left the sliding glass door open on the cooler under the open air cooler. Gorgonzola cheese and diced tomatoes were out of temp. Pic placed items in wic to rapidly cool back down to 41°F.

23: Disclosure not on raw tuna for build your own on menu above open air cooler.

39: Sani buckets with wet wiping clothes inside with no sani water.

41: Several handles of the utensils on the make line were touching product.

Additional Comments

Patron complained 4 people in their family became sick within 24 hours after eating, chicken, beef, and pork at CoreLife Eatery. 2 family members ate the chicken, the other two family members had beef and pork. Provided applicable fact sheets to operator regarding observed priority item violations. A follow up inspection will be performed within 10 days to verify compliance of all priority item violations.
