18: Observed quesadilla unattended on plate on top of stack of clean plates intended for customers. Food temped 74F. Pic did not reply clearly when asked what it was for and he discarded it. Upon further questioning, pic stated it was cooked last night and was “somebody’s.” Assumed food was intended for customers and not properly cooled after being prepped last night. Cos by pic discarding.

21: Precooked tamale wrapped in tin foil in makeline pc 1 has no date mark. Pic states they come precooked and are frozen in a bag. Tamale was removed from bag yesterday morning per pic, no date mark. Cos by embargo 1 lb, discussed ready to eat foods must be date marked if held longer than 24 hours after opening. Violation has been observed during two consecutive routine inspections. A Food Safety Plan (FSP) template will be emailed to operator to use in gaining control over repeated priority violations. Will offer assistance to operator with FSP.
