20: Cheese enchilada on make line above 41 degrees F. Kitchen manager stated they came straight from wic. Embargoed cheese enchiladas.

21: Flan in ric across from chip station expired 12/29/22. Embargoed.

37: Employee drink stored on prep table and under the area where plates are stored near the make line. Employee plate with fork on prep table near expo line.

37: Beans and rice not covered in the storage room.

Additional Comments

Permit will be up for revocation due to cold holding and hot holding violation being noted on 3 consecutive inspection reports in a row. Provide applicable fact sheets to operator regarding observed Priority Items. Discussed implementing a Risk Control Plan (RCP) in order to obtain active managerial control over repeated Priority Items. Advised operator I was available to assist with developing the RCP.
