6: Employee did not hand washing after removing gloves used to handle raw beef before putting on new gloves to touch Prep cooler RTE items CA corrected employee

22: Pre cooked fries/ blanched fries sitting out at room temp at 73F by fryer. PIC stated they Are only held for 2hours but no indication of when the 2 hours start or end. No policy of procedures located. CA discuss with PIC a written policy must be made available to cover procedure of precooked fries. Time must be kept and dicared of fries must be noted. Info on TN 4 hour policy reviewed in put into place for correction.

Discuss having a written time policy present or on file and indicate procedures are follow daily. Chlorine and QA test strips present and food thermometer present.
