18: Hibachi rice cooked on Monday impropperly cooled and temping at 49°F. Other tcs food in same ric was temping at 41°F. Ric was reading 38°F. Rice is cooked placed in a pan cooled on counter around 15 minutes, butter is added and mixed in rice, then lid is placed container and placed in ric. Embargoed rice. Discussed cooling time and temperature along with proper ways to cool rice.

22: Sushi rice being held under TPHC did not have time as stated on written policy. Sushi rice was hot holding below 135°F. Embargoed food and discussed.

31: Hibachi rice cooked an hour ago with lid on in ric temping at 110°F. Pic decided to throw rice away. Discussed proper cooling techniques with pic.

37: Bag of onions stored on the floor.

41: Hendle of scoop touching food product.

42: Wet stacking of large pans.

43: To go container used as a scoop up front at sushi bar.

50: Food debri in hand sink beside grill.
